The MONVA family business was founded in 1972 and has a long tradition of producing virgin olive oil (their families have been producing olive oil since the 18th century). He owns his olive grove of 650 hectares with 90,000 olive trees of the Picual variety, located in the Sierra Mágina mountain range (with a Protected Designation of Origin), in Jaén, Andalusia, Spain, at an altitude of 550 meters above sea level. It is situated in the foothills of the Sierra Mágina Natural Park, in an area particularly suitable for growing olives. This area is home to the most extensive olive plantations in the world. There is an ideal geographical location for the cultivation/production of high-quality extra virgin olive oil .

What makes MONVA extra virgin oils special?

> proper tree management and an early harvest between mid-October and December, when each olive is picked at its optimum ripeness. The olives are ground within four hours of picking to guarantee maximum freshness and quality.

> the latest harvesting techniques, in which the fruits are harvested directly from the tree, eliminating contact with the ground, guarantee that the olives have not come into contact with mud, dust and other impurities that would otherwise degrade the quality of the olive oil

> grinding at low temperatures (between 18°C - 29°C) guarantees the preservation of the optimal taste, aroma and nutritional properties of the olives

> the post-production filtration process and the inert atmosphere in the cellar prevent the fermentation and oxidation process of the oil

> a warehouse with permanent temperature control provides a constant stable environment for oil storage.

The oils are characterized by exceptional acidity from 0.08% to 0.17%.

Dominus Acebuche is probably the most exclusive oil on the market, the only one made from wild olives. It has a phenolic content (antioxidants) unmatched by any other olive oil and pays tribute to the tradition of producing olive oil from these olives, which was already implemented by Neolithic communities in the Sierra Mágina region six thousand years before the arrival of the first olive varieties brought by the Phoenicians. The collection process is similar to the original ancient one. This oil is so unique that it is constantly being talked about in both Spanish and international media. It is used in luxury natural cosmetics and haute gastronomy.
